Eating saturated fats is NOT the cause of Heart Disease
I know, you think I’m crazy, right? because your doctor told you to stay away from anything with saturated fats.
But, I’m here to give you some facts that will show you how it is not the saturated fat that is causing all this heart disease, but it is the packaged, processed sugar and refined foods that everyone is eating that is really causing an increase in the percentage of heart disease in our country today.
The fact is that before 1920, the incidence of heart disease was very very low and not until about 1950 did we see any increased rate of heart disease. The evidence of heart disease now is that heart disease kills over 40% of the population right now.
What happened between 1920 and 1950 that caused this increase in heart disease?
If the truth is that saturated fat is what is causing heart disease, then we would assume that we eat more saturated fat now than we ate at that time.
BUT, this is not the case.
Here are some interesting facts that came out of Sally Fallon’s book – Nourishing Traditions. She writes “During the sixty year period between 1910 and 1970, the proportion of traditional animal fat in the american diet declined from 82% to 62%.”
So actually the amount of saturated fat that we ate went down, and “the amount of butter that we ate went down from 18 pounds per person per year to just 4 pounds per person per year”.
So people were eating a significantly less amount of butter over that period!
Also, She states that “During the last 80 years, the amount of dietary cholesterol intake has increased by only 1%”
So if this is true, people are eating less saturated fat, they are eating less butter and they are not eating very much more cholesterol, then how can that be the cause of this increase in heart disease?
Sally found that “During the same period, the amount of dietary vegetable oils in the form of margarine, shortening and refined oils increased by 400%”.
This is significant.!
Once we start eating these refined oils, the incidence of heart disease is drastically increased.
She also says “The consumption of sugar and processed foods increased by 60%”
I truly believe that this is only one piece of the research. People are eating way too many processed, fake foods, tons of processed carbohydrates and tons of refined sugar.
Even in my own Practice – When I decrease these foods, people become much much healthier.
So taking these facts into account, it is not the saturated fats, it is not the healthy organic raw butter that you can cook with that is causing heart disease, it is not the unrefined organic coconut oil, not the natural grass fed beef.
These things are ok!
It is not the egg yolk that is giving you high cholesterol, it is these processed foods. It’s cake, it’s cookies, it’s tons of pasta, tons of bread, causing these incidences of disease.
